Immune

Two weeks ago I started following a 30 Day Autoimmune Protocol published by a famous Dr. (Not Oz). It did pretty well, but I still had at least 3-4 histamine episodes during that time. It is really true that certain fish/shellfish can trigger a histamine reaction. It is really true that certain spices can trigger a histamine reaction.

Some things I learned over the last 2 weeks:
1. There are 1001 things you can do with cauliflower. You can make it look like rice. You can make it into crust. You can make it into bread. Etc.
2. You really can have a balanced diet (fat, carbs, protein) eating Paleo.
3. You can make a lot of dishes with sweet potatoes and onions.
4. You can scramble a wide variety of foods together for a quick meal.
5. Fresh is best.

So, from here I am tweaking my Autoimmune diet to be mostly low histamine, quick, and fresh. Whole chickens can be cooked ahead and the meat frozen. Turkey and beef can be browned or made into patties and cooked (also frozen right away to prevent a histamine reaction later). A wide variety of vegetables can be sautéed, roasted, and steamed. Throw a little green leafy in there, and you have a meal.

Idea: bake a chicken breast in the morning and eat on it all day.

Here was my lunch today:

Browned ground beef (seasoned with salt, pepper, and garlic powder) and sautéed onions (in coconut oil) on slices of romaine. Easy.

But he answered, “It is written, “‘Man shall not live by bread alone, but by every word that comes from the mouth of God.’” (‭Matthew‬ ‭4‬:‭4 ESV)

Off

I have been off the grid and off the wagon. It is hard following a strict diet during the holidays. It is also hard following a strict diet while changing jobs.

Now, we are though the holidays. I am in the swing of my job change. I may have been on the wrong track diet wise.

There are several foods that are naturally high in histamine. These include tomatoes, spinach, dairy products, fermented foods, citrus, and aged meats. Other foods can cause your body to release histamine. Even other foods can aggravate the inflammatory process, putting stress on your body.

This would be vegetarian may be experimenting with a Paleo-type diet. I don’t think I can completely cut out grains and beans, but there are ways to prepare them to be less inflammatory. We got a pressure cooker for Christmas. Let me say, they are awesome! (Black-eyed peas for New Years done in 10 minutes-from dry.)

Understand

The first lesson I have learned through this process: No one understands your body better than you (except God). It is futile to try to explain your situation to others (except your doctor).

Truth is, you do not owe explanations (or apologies) to anybody. Whether vegan, vegetarian, paleo, low salt, high carb, low sugar, low histamine, your diet is your business. You know how your body performs on different fuel sources. Do what works for YOU!

I have been eating in a very purist/raw way. Oatmeal/grits/cream of rice. Salad with a little oil. Hummus/almond butter on rice cakes or Wasa. Beans and rice.

A few days ago I made some flatbread with water chestnut flour and water. It definitely needs some tweaking. The water chestnut flour was found at our local Indian Grocery. They had a wide variety of vegetables, rices, and flours (very economical). Most flours were $2-$5 a bag.

Whole

So, the last week was a little difficult. As I have attempted to go low histamine, I have noticed more and more how different foods affect me. I did really good most of the week, then towards the end I cheated a bit. Which culminated in a histamine attack last night.

There are lots of resources out there (food lists, blogs, articles). Even the Whole 30 plan has a good list for histamine sufferers. However, there are a limited amount of recipes (free anyway). I guess I will have to make my own.

Whole Foods is a great place to start. We did a 28-Day Challenge with them a while back. Unprocessed, plant based. We felt great at the end.

That is not a lot for now, just know I am trudging through and will share more of what I have learned soon.

Histamine

I have been struggling. Struggling to figure out why I have these myriad of symptoms I can’t explain. Struggling to figure out why a whole foods diet makes me feel mostly better. Struggling to figure out why a juice diet or a smoothie diet makes me feel some better. Struggling to figure why a vegan diet makes me feel some better. Struggling to figure out why these diets/lifestyles don’t stick and don’t make me feel completely well.

Histamine

How did I figure it out? The severe histamine reactions I have experience the last few times I have ingested alcohol (1). Runny nose, sneezing, puffy eyes, coughing, etc. VERY unpleasant. A quick google search lead me down a rabbit hole to people just like me.

Did you know you can react to histamine in a food and not be allergic to the actual food? Years ago I was convinced I had food allergies. (More about the specific symptoms later.) I underwent allergy testing. NOTHING reacted.

Did you know some foods are more prone to “releasing” the histamine stored in your body? Alcohol is one of those foods.

So, today, I am undergoing a change. I am cutting out processed foods and high histamine foods from my diet. This morning I had oatmeal with agave nectar. And coffee. Coffee is on the “questionable” histamine list.

Decade

Today, I have been a mom for a decade. Ten years ago today we were heading to the hospital for the birth of our oldest. He was not in my belly, but the belly of a different and much younger woman. How can I verbalize how thankful I am for her, the woman who trusted me enough to let us raise her flesh and blood as her own? 

How can we thank any of them enough? Two birth moms are unknown to us. How much trust does it take to leave your child on the side of the road in the middle of crazy busy China?

Somedays I feel I have this great faith (most days I don’t). I have never left my child for another to raise. 

Somedays I feel brave (most days I don’t). I have never felt an emptiness of womb that once held a baby, but that child is now being held in another woman’s arms.

Being a mom is hard, but life would be much harder if I was not a mom.

Today I am thankful. So overwhelmingly thankful.

10 years with the D-man today.  It has been a fun wild ride.  Being a dad has been the greatest experience of my life.  I didn’t realize how helping nurture a baby into a 10 year old would grow me into the man I am now.

I have experienced cuts, bruises, falls, traumas, but life with boys is always supposed to be crazy. 

As Lori alluded to, being a mom is hard.  Being a dad is equally as difficult but in a different way.  You find yourself acting like your father did when you were growing up, which isn’t a bad thing.  It is especially amusing when you catch yourself doing it.  I have been called “Mac” (my father) on occasion by my bride.

My D-Man is 10. Wow!  Thanks to The Lord for such a blessing that I was given.

Psalm 127:3-5 Behold, children are a heritage from the LORD, the fruit of the womb a reward. Like arrows in the and of a warrior are the children of one’s youth. Blessed is the man who fills his quiver with them! He shall not be put to shame when he speaks with his enemies in the gate.

Tomorrow is Sanctity of Human Life Sunday. Since we returned with our babies in October 2011, many of our friends and family have traveled overseas to adopt children. Some of our friends are far down the paper trail of adopting again.

Thank you. Thank you for loving these children. For doing the hard things. The paper trail. The wait. The travel. The adjustment. They are hard. Yet, they lead to life. Life for you and life for these children.

Care

It has been a long time since I last blogged. Honestly, I haven’t been feeling it. There has been a lot going on. Joy and pain. Our and our friends.

Do you ever wonder if God cares about what is going on in your life?

He cares for you.

Do you ever think that if God loved you, He would not make you walk through pain?

He loves you.

I do not have a specific verse. The entire Bible is God showing us how much He cares for and loves us.

Let Him.

Choice

I have typed and erased. Typed and erased. Typed and erased. There is no way to ease into what I am about to say. (This blog has been in drafts since January. While snuggling with my E this morning, I decided to go ahead and post.)

Why would anyone choose to be an orphan? When a person chooses the world and not Jesus, they choose to be an orphan. 75 % of the planet will choose to stay in the orphan bed. They will choose not to have a relationship with Jesus.

Satan has tricked many into thinking they cannot leave those in the orphanage. Satan has tricked many into thinking that those who have gotten out of the orphanage somehow think they are better. We don’t. We want you out. Staying there is death. Literally.

John 14:18 ESV

“I will not leave you as orphans; I will come to you.”

He has come. He is calling you. Do not choose the orphan’s bed because you are too stubborn to leave it.

Is life easy once you leave the orphanage? No.

It can be a little scary.

And a lot real. What was once in darkness is now in the light.

Learning how to love and be loved.

God has chosen us as His children. Do we stay in the orphanage where it is predictable but cold or do we follow where it is unpredictable but warm?

Run. Run away from the orphanage to your eternal family. We are waiting.

Last week the Christian community started celebrating the season of Advent, or the anticipation of the coming of Christ. We will walk through Hope, Love, Joy, and Peace. There are many great tools out there to help really engage you.

Lately though, one of the four pillars of Advent has been on my mind. Love. Mainly because this little fella

love’s everything. An example of a conversation between Z and myself:

“What’s that?”

“That’s a fire truck.”

“Ooooo, I love that fire truck. Do you love that?”

“Yes Z, I love that.”

Repeat…

What a lesson for this way too busy woman. In this Advent season, and every season, how do I love well? The first lesson is to remember that Jesus is love.

Secondly, we remember that Love IS!

1 Corinthians 13

If I speak in the tongues of men and of angels, but have not love, I am a noisy gong or a clanging cymbal.

And if I have prophetic powers, and understand all mysteries and all knowledge, and if I have all faith, so as to remove mountains, but have not love, I am nothing.

If I give away all I have, and if I deliver up my body to be burned, but have not love, I gain nothing.

Love is patient and kind; love does not envy or boast; it is not arrogant or rude. It does not insist on its own way; it is not irritable or resentful;

it does not rejoice at wrongdoing, but l rejoices with the truth.

Love bears all things, believes all things, hopes all things, endures all things.

Love never ends. As for prophecies, they will pass away; as for tongues, they will cease; as for knowledge, it will pass away.

For we know in part and we prophesy in part,

but when the perfect comes, the partial will pass away.

When I was a child, I spoke like a child, I thought like a child, I reasoned like a child. When I became a man, I gave up childish ways.

For now we see in a mirror dimly, but then face to face. Now I know in part; then I shall know fully, even as I have been fully known.

So now faith, hope, and love abide, these three; but the greatest of these is love.

Back to my sweet boy. Am I so busy that I totally miss Jesus around me? The beauty and glory of Him revealed to me in EVERY good thing? The fire trucks, the marshmallows, the chair, the food, the house, the street, the dog, etc.

It is not Thanksgiving, but I still need a supreme dose of Thankfulness and a lot less Hustle and Bustle.
